Jay's Dishes
Recipes, tips, and stories of Jay's dishesWhen helping his mom to recover after cancer treatment, Jay learned how important a balanced and nutritious diet could help that process. Since then, he has put a great emphasis on nutrition of ingredients he uses, recipe he cooks and food he consumes. For each meal, he likes to include sufficient carbs, protein, fiber, fat, mineral, vitamins…He has made effort to use less or readily accessible ingredients (seasonings) in food he cooks. He is also fond of recipes with simple processing (cooking techniques). He jokes that he has relearned how to eat. He feels everyone in the modern world has to do that too. When the pandemic hits and schools are closed, Jay spent more time to prepare food for kids. To cheer up kids’ spirit, he brougt more variations to his dishes. That really gave him different sense of cooking.
All in all, Jay wishes everyone could enjoy cooking, eating delicious and nutritious food, and ultimately staying away from health issues and have a balanced life.
Soybean & Grain Smoothie 黑豆米浆
Like the veggie smoothie shared before, this is another very personal recipe (with varied ingredients) I use very often since I bought into the concept of smoothies with different ingredients for different occasions. Unlike the veggie/fruit one, ingredients used in...
Creamy Mashed Potatoes 丝滑土豆泥
Potatoes are a staple food throughout the world because they are relatively affordable and nutritious (rich in potassium, vitamin B-6, and vitamin C). Despite these benefits, I rarely cook dishes with potatoes as the main ingredient due to concerns about its high GI...
Kimchi Fried Rice 韩国泡菜炒饭
We all have long memory of dishes we had long time ago. One of my memories is kimchi fried rice I had a few years ago in New York City’s Korean town. They might cook it on a flat iron so that the rice grains were lightly toasted, and the dryness was to my liking....
Chicken wing pirikara/fried chicken wing 日式炸鸡翅
During the COVID pandemic, I eat a lot of lunches during weekdays at home. To save time, I buy pre-cooked dishes from a local Japanese grocer. Chicken pirikara is always in my shopping bag. You can also buy pork and squid pirikara from the grocer. In Japan, these are...
Crab Bisque 蟹肉浓汤
One of the grocers I visit has canned crab meat on sale occasionally. These are imported products. I don’t know the real price, but the “sale” price is too good to resist the temptation to buy. I used to make crab cakes out of this crab meat, but my kids lost interest...
Pan Seared Mixed Mushrooms 干煸什锦蘑菇
Mushrooms are a healthy food (ingredient). More than most people think. They are low in calories, carbs, sodium, cholesterol, and fat. They are rich in vitamin B (B1, B2, B3, B13), vitamin D, dietary fibers, and antioxidants. Despite all the benefits, mushrooms are...
Pan Seared Salmon 香煎三文鱼
Thanks to the modern logistics, we have year-round access to a lot of foods used to be seasonal. To name a few, strawberry, blueberry, apple, and salmon, which is either farm-raised or frozen... Even though you could buy salmon from grocers year-round, fresh, and wild...
Homemade Peanut Milk 自制花生奶
A few years ago, there was an argument about if all the planted based drinks, such as almond milk, soy milk, macadamiamilk… should be called milk as its definition is “Milk is a nutrient-rich liquid food produced by the mammary glands of mammals” As a consumer, I...
Gaston Gerard Chicken法式芝士鸡块
This is an interesting recipe as it could be traced precisely back to the original inventor. Well, not 100% from just the name. This dish was named after Mr. Gaston Gerard, Mayor of Dijon, France at around 1930. It was Mrs. Gaston Gerard who created this dish when she...
Beef Curry Rice (short-cut recipe)咖喱牛肉 (ビーフカレー)
This is a short-cut recipe that surely gives you a good flavor of Japanese curry and at the same time saves you time. Curry rice (beef, chicken, and others) is very popular in Japan. It also gained popularity around the world. Japanese curry is very different from its...
Fruit/Veggie Smoothie 果蔬汁
Ever since I started to pay attention to my diet a few years ago, I have been using smoothies with different combination of ingredients. I have some combinations for breakfast and others as drinks going with meals. I reviewed recipes of different smoothies and...
Traditional French Toast 传统法式吐司
My kids like baguettes. They simply tear small pieces from the loaf and use it as a snack. Most of time, they can’t consume the whole loaf within a day. I usually throw away the leftover as it would have become as hard as a rock. I later learned that the hard...
