Equipment

  • 10" or 12" frying pan
  • large baking tray

Ingredients

  • 0.5 lbs chicken breast
  • 0.5 lbs fish filet
  • 1-2 tbsp Cajun mix
  • 2-3 tbsp oil
  • 1 small tomato
  • 0.5 large ripe avocado
  • 2 tbsp feta cheese
  • 1 lime or lemon

Instructions

  • Set oven to 375F
  • Mix 2 tbsp Cajun mix with 3 tbsp oil. Spread the paste onto the fish and chicken filets. Use hands to massage the filets to make sure the seasoning coats the filets uniformly.
  • Cover the baking tray with aluminum foil and parchment paper. Place the seasoned filets onto the tray.
  • Bake about 8-10 mins. Take the tray out of the oven, and flip the filets. Bake another 8-10 mins or until the juice reduces
  • While roasting the meat, heat the frying pan to hot. Quickly roast the tortillas (10-15 seconds each side) to soften them.
  • Cut the tomato and avocado into 1/2" chunks. Slice the lemon or lime
  • Once the meat is done, move the fish to a bowl, and break the filets into smaller pieces. Cut the chicken into 1/2" pieces. Season both meats with some lemon/lime juice
  • Assemble the taco, and serve with a drink
