Peel the onion and carrot
Rinse the shiitake mushrooms, onion, cabbage leaves, and carrot
Slice the mushrooms, onion, and carrot (1/8" wide and 1.5" long pieces)
Remove hard stem from the cabbage leaves, and tear them to small pieces (1.5"x1.5") with your hands
Cut the pork slices to 1.5-2.0" pieces
Rinse the noodles with cold water and drain the water
Add sugar, soy sauce, ketchup, and Worcestershire sauce to a small bowl, and mix well
Put the pan on stove. Then, turn heat to high and add oil
Add pork slices, and stir at medium to high heat
Once pork fat comes out and the pork pieces turn brown, add the onions and stir
Once the onions become translucent, add the carrot and mushrooms slices and stir
After about 3 mins at medium to high heat, add the noodles and the sauce and stir
Continue to stir at medium to high heat for about 5-6 mins4
Adjust taste with salt or additional soy sauce
