I cook beef in different ways, such as steaks from different cuts, burgers, meatballs, beef bourguignons, beef wellington, Chinese stewed beef, Korean beef bulgogi, beef curry, Japanese gyudon … Some of the dishes are easy to make while some need more effort. These are all good dishes, but I have always been looking for different beef dishes.

 One of local grocers recently had porterhouse steak on sale. I ended up buying and cooking too much. I hated to throw away the leftovers. I cut the leftovers to small pieces and stir fried them with just jalapenos and ground black pepper. It ended up tasting very good. Another thing I liked about the dish is, unlike raw meat, the precooked steak didn’t render any water during the stir-frying process. That gave me an idea; I decided to pre-cook steak before stir-frying. It is wasteful to buy good quality steak and precook for stir-frying. The same grocer also sells thin sliced steak. Baking the steaks is an easy way to precook.

Unfortunately, the dish I made the second time was a little tough. I then realized that the baking temperature was too high. The moisture all came out during precooking (baking). I realized that low temperature (sous vide) cooking could keep the steak misted. I eventually baked the steaks at the lowest temperature setting most ovens in the US offer: 170F. After this step, not much water came out during the sauté step which renders out the fat. That mixes with ground black pepper and jalapeno to give the dish such great flavor.

Just a reminder: serve the dish while it’s still sizzling.

Delicious Pepper Steak 回锅牛柳

Simple ingredients but extremely delicous when immedidately served after cooking

  • 12“ frying pan
  • baking tray

Ingredients
  

  • 1 pound thin sliced steak
  • 4-5 jalapeno
  • 1 tsp ground black pepper
  • 1 tsp salt

Instructions
 

  • Cut the thin sliced steak into 2" pieces, and place them onto the baking tray
  • Set the oven to 170F. Put the steak into the oven. After 5-6 mins, take out the tray, and flip the steak. Bake for another 3-4 mins or until the steaks turn from red to pink.
  • Cut the jalapeno into 0.5"-wide pieces
  • Put the frying pan on top of the stove. Add oil and turn heat to high. Add the jalapeno. Saute at medium to high heat.
  • Once both sides of the jalapeno pieces are slightly charred, add the baked (cooked) steak to the pan. Keep heat at medium to high
  • Keep stirring to make sure all steak pieces are sauteed.
  • Once fat in the steak renders out, and the steak turns brown, add salt and ground black pepper. Stir and mix for 2-3 mins
  • Serve it immediately when cooking is done

Notes

  • I kept ingredients simple. You could use other seasonings to make Philly steak, fajitas or Oriental style. 
  • If you want the dish to be more spicy, you could keep the pith and seeds.
  • You can bake the steaks at higher temperature for a shorter time. The key is trying not to render out the moisture.
