I always look for new dishes for dinners. However, I don’t spend much effort to try different recipes for breakfast. I feel constrained to keep a good balance of carbs, proteins, good fat, and fiber in breakfast using common and health ingredients. On top of that, unlike dinner, you don’t have much time to waste on breakfast. I want to have a breakfast ready within 12-15 mins.
I regularly use toasted bread, plain omelet, cured meat, and fruits for breakfast. This dish combines all these ingredients to create a flavorful, better presented, nutritious, and fulfilling breakfast option.

Toast cheese egg sandwich 芝士鸡蛋三明治
A quick, flavorful, and nutrion balanced breakfast

- Take two pieces of bread, and remove the edges
- Crack the eggs, add pinch of ground black pepper, and whisk
- Add oil to the pan, and turn heat to high. Once the pan become hot, turn the heat to low to medium, and add the egg liquid
- When the center of the egg pie is semi-solid, place the bread on the pie, and gently press to make the bread stick to the egg pie
- Use a spatula to flip the egg pie. Place the cheese and prosciutto on the egg pie. Fold the egg pie edges to the center to cover the cheese and prosciutto.
- Use the spatula to fold the two pieces of bread to form a sandwich. Leave the sandwich in the pan at low heat. Flip the sandwich to make sure both sides are golden and the cheese becomes molten.
- Serve the sandwich with drinks and fruits

Notes
- You can replace the white bread with multi-grain bread.
- You can replace the mozzarella with cheddar or other cheese you like.
- You don't have to add prosciutto or any meat. I happened to have some leftover prosciutto.
- If you do add prosciutto or meats, don't add salt to your whisked egg; it could become salty.
- The olive oil could be replaced with butter.
