Cloud eggs or egg’s nests, whatever you want to call it, are an interesting dish. The ingredients are simple. Eggs, cheese (even optional), and bread (also optional), that’s it. This dish has gained popularity around the globe due to its simplicity and because of social media. Some people said this technique has been used in France for many years. 1963 French children cooking book, La Cuisine Est un Jeu d’Denfants recorded this recipe. I first learned this recipe from a French chef. As simple as this recipe is, you could still make some tweaks: fully cooked yolk vs raw yolk, with/without cheese in the egg white, additional seasonings on the top, with/without bread, white bread vs multigrain bread… This is the beauty of cooking. There is always variation even for the simplest ingredients.

Cloud Egg Sandwich 云朵鸡蛋吐司
Equipment
- whisk
- medium mixing bowl
- baking tray
Ingredients
- 3 pieces white bread
- 3 medium eggs
- 3 tbsp shredded cheese (optional)
- sprinkle ground pepper (optional)
- sprinkle salt (optional)
Instructions
- Set the oven to 350F
- Crack open the eggs, and separate egg white and yolk
- Whip the white vigorously until the foam is stiff
- Add the shredded cheese to the egg white foam and gently mix
- Spread the egg white foam onto the bread. Place the yolk in the center. Sprinkle some shredded cheese
- Cover the baking pan with aluminum foil. Place the bread onto the baking tray
- Bake the bread for about 5-6 mins
- Broil at medium heat for 1 min (optional)
- Serve with a drink or other dishes

Notes
- Adding cheese is optional. If you add cheese to the egg white, no salt is needed. However, if you don't use cheese, sprinkle some salt to the egg white before whipping
