Souffle Pancake 舒芙蕾松饼

- 3 large eggs
- 2 tbsp all purpose flour
- 1 tbsp sugar
- 1 tbsp milk
Crack open the eggs and separate the egg yolk and white. Place the yolk and white into two separate bowls
Add the flour and milk to the egg yolk. Mix with the whisk to form a homogenous paste
Add sugar to the egg white bowl. Whip vigorously with the whisk for about 5 mins to form a firm foam
Move 1/3 of the egg white foam to the egg yolk paste and gently mix
Add this egg white/yolk mixture back into the egg white foam. Gently mix to form a homogenous paste
Place the pan onto the stove and turn heat to medium to warm up the pan. Add 1/2 tsp of oil and use a small piece of paper towel to spread the oil
Scoop the cake paste and add to the pan. Add 1 tbsp of water to the pan. Cover it with a lid and cook at low heat for 3 mins
Flip the pancakes. Put the lid back on and add 1 tsp of water. Cook at low heat for 2-3 mins
Plate and serve with other items
