
Miso Ground Pork (Nikumiso Gohan)味增肉末
A quick but flavorful dish with simple ingredients.
Equipment
- 12“ stir-frying pan or wok
Ingredients
- 0.5 lbs ground pork
- 1 tbsp light soy sauce
- 0.5 tbsp miso (I prefer white miso)
- 1 jalapeno (optional)
- pinch sugar (optional)
- pinch chili flakes (optional)
Instructions
- Rinse the jalapeno and cut into fine pieces
- Place the pan or wok onto the stove, and turn heat to high
- Once the pan/wok is hot, add the ground pork slab
- Turn heat to medium. Use a spatula to break the pork slab into small pieces
- Continue to stir until the pork turns into fine pieces. At this time, fat is rendering out. Add the soy sauce and stir
- Add the miso and stir to thorougly mix with the pork
- Add the jalapeno pieces and stir. At this moment, the pork might become dry; add a few tbsp of water and stir for about 1-2 mins
- Adjust the flavor with addition of soy sauce or sugar
- Plate and serve

Notes
- I like to keep the pork dry. Thus, I let the fat render out as mush as possible.
- Adding jalapeño is just to bring in some color. It could be eliminated or replaced with red pepper pieces to give a different color.
