The keto diet has gained popularity in recent years. Even though I don’t practice any particular diet, I watch my carb (rice, bread, noodle, potato, sugar…) intake closely as my metabolism slows down with my age, so I am interested in playing with some keto recipes to make a snack for myself. Almond flour banana bread is the one I like the most. It is such a forgiving and versatile recipe in terms of ingredient selection, measurement, availability, and the whole preparation process. I did list a lot of ingredients in the recipe, but you can reduce them to only four essential items. It is very suitable food for breakfast and snacks. Without added sugar, this recipe is packed with proteins, vitamin E, antioxidants, fiber, fat, potassium, copper, iron, and minerals. I bake at least one loaf every week.

Keto Almond Flour Banana Bread 杏仁粉香蕉面包

This almond flour banana bread is a keto-friendly recipe. Only four very readily available ingredients are used. No fancy cooking/baking techniques are needed.

  • large mixing bowl

Ingredients
  

  • 3 eggs (size doesn't matter that much)
  • 3 very ripe bananas (size doesn't matter that much)
  • 3 cups almond flour (0.5 cup could be replaced by whole wheat flour)
  • 1 tsp baking powder (could be replaced with baking soda)
  • 1/3 cup pumpkin seeds (optional)
  • 1/4 cup crushed pecans (optional)
  • 1/8 cup chia seeds(flax seed or sesame seed) (optional)
  • 1/4 cup raisins (optional)

Instructions
 

  • Set oven temperature to 350F
  • In a large mixing bowel, add three peeled ripe banana and smash them
  • Add three eggs to the smashed banana. Smash and mix well
  • Add almond flour (or almond and whole wheat flour)
  • Add baking powder
  • Add all the optional ingredients (pumpkin seeds, crushed pecans, raisins, chia/flax/sesame seeds)
  • Mix well with whisk and let the paste rest
  • Cut a 12" long piece of parchment paper (watch video for details). Fold the paper to fit into the bread loaf pan
  • Move bread paste to the loaf pan. Shake to level off the surface
  • Put the pan into oven for 40-50 mins. Set the timer for 40 mins to check the color and hardness of the surface. Once the bread is brown and the surface is hard, take it out of the oven
  • Take the bread out of the pan and cool it down. Slice it when it is cool

Notes

-To add flavor, texture, and nutrition, pumpkin seeds, crushed pecans or walnuts, raisins, flax seeds are highly recommended.
-The total baking time depends on the oven used. It is highly recommend to check the bread color and surface hardness to determine when to take the bread out.
-Replacing some almond flour with whole wheat, or regular wheat or other flour only changes total carbs and the texture; it will not change the preparation process. 
-No butter, oil, and sugar is needed.
