I have to say I don’t know if people in the Mediterranean region cook dishes (chicken) exactly this way. However, I do know that a lot of people is trying to practice the Mediterranean diet. I guess even if this recipe is not cooked by people in that area, it does have the spirit of Mediterranean diets, which uses a lot of olive oil, garlic, herbs, tomatoes, wine, and simple cooking techniques.
I cook a lot of chicken dishes and styles. I would say this is the number one recipe I recommend. I consider all the ingredients to be healthy. The slow simmering marries the flavor of all the ingredients so nicely. The color of dish is also cheerful. It goes well with bread, noodles, and rice. The following is a meal combination I use. The drink is a personal veggie smoothie.

Mediterranean Chicken 地中海风格时蔬烩鸡
Equipment
- 12“ frying pan
Ingredients
- 14-16 oz chicken thigh or breast
- 2 bell peppers (red/yellow or red/organge)
- 20 pieces cherry tomato (red/yellow mixture)
- 3 tbsp olive oil
- 2/3 cup white wine
- 4-5 cloves garlic
- 1 tsp Italian herb
- 1 tsp salt
Instructions
- Cut the chickens to 2"X2" pieces
- Cut the pepper to 1"X2" pieces
- Place the pan on the stove top, turn heat to high, and add the olive oil
- Add all chicken pieces and the garlic to the pan and saute both sides until brown at medium to high heat
- Add the pepper slices, salt, wine, and herbs. Put the lid on and simmer at low to medium heat for 8-10 mins
- Slices the tomatoes and add them to the pan. Put the lid back and simmer for another 8-10 mins
- Adjust the flavor with additional salt, or a sprinkle of sugar.

- You can replace the mixed herbs with fresh basil
- Skin-on chicken has better flavor and texture
- You can add some chili peppers to make it spicy
- You can adjust the acidity of the dish with grape vinegar or sugar
