A few weeks ago, I had a dinner with a customer at a casual restaurant in Charlotte area. I was with a group and the place was picked up by the customer. So, I didn’t know what kind of food style the place serves before I saw the menu. I picked the Blackened Redfish. The menu says: Classic Cajun spiced redfish with crawfish cream served with red beans and rice. By then, I learned that the place serves Gulf Coast style food as the owner grew up in that area. Our table even tried to decide how “pecan” should be pronounced, puh-Kahn or pee-can? It was an interesting discussion.
I love spicy food and do eat Cajun food occasionally. However, I never cooked Cajun food in the past. I know it’s easy to buy Cajun seasonings in grocers. However, like most of my dishes, I prefer to start from very beginning. It’s easy to make Cajun powder at home. The spices that go into the Cajun seasoning are flexible. I added what I could find in my cabinet. With one batch, I ended up with 10 tbsp of powder, which I used to Cajun shrimp, chicken…
Since the fish I use is fragile if cooked by pan frying, I decided to season the fish filets with oil/seasoning paste and bake the fish. The result is very satisfying. Serving with a rice side dish makes it a wonderful dish.

Baked Cajun Fish
Equipment
- baking tray
- mixer
- small bowl
Ingredients
- 0.5 lbs fish filet
- 1 tbsp olive oil
- 3 tbsp paprika
- 1.5 tbsp salt
- 2 tbsp garlic powder
- 1 tbsp black pepper
- 0.5 tbsp white pepper
- 1 tbsp dried oregano
- 0.5 tbsp cayenne
- 0.5 tbsp dried chili pepper
- 0.5 tbsp dried thyme
Instructions
- Add all dried seasonings to the mixer, and grind into powder
- Add one tbsp freshly made seasoning powder and one tbsp of oil to the bowl and mix well
- Spread the seasoning/oil paste onto the fish filets. Massage the filets to make sure seasoning uniformly coats the filets
- Set the oven at 375F. Placed the seasoned filets onto the baking tray
- Bake for 12-15 mins, or until the juicy coming out the fish almost dries up
- Broil the filets under low heat for about 2-3 mins
- Plate and serve with a side dish

Notes
- You can use Cajun seasoning from grocers.
- The fish filet I use is so fragile and turns into pieces if pan fried. That's why I bake it in oven to keep the integrity.
