For the longest time, I only cooked chicken dishes once every a few weeks. Back then, when I cooked chicken dishes, I only cooked Chinese or Thai style dishes using whole chickens, or chicken noodle soups. I didn’t like deep frying chicken or baking chicken wings or thighs. This totally changed when I watched a video clip from Gordon Ramsay. He showed an easy chicken parmesan dish. I tweaked the recipe to only use the ingredients I happened to have at that time. Since then, I cook it at least once a week as it is such a quick and nutritious dish. It is the most welcomed dish by my kids.
What makes the preparation even faster is that I mix all seasoning with the whole bag of bread crumbs and store the premixed crumbs in the refrigerator. I even mailed a bag of pre-seasoned crumbs to my mom in China, and explained to her how to cook the dish using chicken breast. She first cooked it when she had one of her birthdays. She said it tastes really good.

Easy Chicken Parmesan 简易香煎鸡排
Equipment
- 12“ frying pan
- 2 medium size plates
Ingredients
- 1 pound chicken tender (or chicken breast)
- 1 cup bread crumbs
- 2 tbsp parmesan cheese powder
- 1/4 tsp salt
- 1/2 tsp garlic powder
- 1/4 tsp black pepper powder
- 1/2 tsp paprika
- 1/2 tsp dried herbs
- 3-4 tbsp vegetable oil
Instructions
- Remove chicken tendon from the tenders. Marinate the tenders by sparkling salt on each piece and rub. Cover the tenders, and rest for 10-15mins.
- Place the bread crumbs and all seasoning in a zipbag, and shake to mix.
- Whisk the egg, and add to the chicken tender plate. Use one hand gently grab and drop the tender pieces to mix the egg with the tenders.
- Pour the seasoned crumbs into a plate. Place tender pieces on the crumbs, and coat both sides with the crumbs.
- Place the frying pan on stove, and turn heat to high. Add the oil.
- Once the oil becomes hot, place all tender pieces to the pan. Turn heat to low or medium. Fry each side for 4-5mins.
