If you ever visited a Japanese steakhouse in the US, you might have seen this dish before. Chefs spray some oil (or spread some butter) onto the hot iron plate (Teppan,鉄板) in front of them and add veggies, meat, noodles, and sauce on top of the oil. By simply mixing the ingredients with two small shovels, your Yakisoba will be ready in a few minutes.

In Japan, Yakisoba is a popular street food as the set-up is easy and ingredients are very common. Like hot-dogs in the US, Yakisoba is regularly served in events, festivals, and snack shops. It is such a versatile recipe as you could almost freely change up ingredients (meat or veggies) I am showing here to satisfy your own preference.

I don’t know what takes me so long to decide to make this dish. Once I made it, I know it would regularly show up on my weekend lunch table. Try it! You will love it too.

Equipment

Ingredients
  

  • 0.5 pounds sliced pork belly1
  • 1 medium carrot
  • 3 shiitake mushrooms2
  • 1 medium onion
  • 3 cabbage leaves
  • 1 package Yakisoba noodles (3 servings in the bag)
  • 2 tbsp oil
  • 1 tsp sugar
  • 1-2 tbsp soy sauce
  • 2 tsp ketchup
  • 1-2 tbsp Worcestershire sauce3 (optional)

Instructions
 

  • Peel the onion and carrot
  • Rinse the shiitake mushrooms, onion, cabbage leaves, and carrot
  • Slice the mushrooms, onion, and carrot (1/8" wide and 1.5" long pieces)
  • Remove hard stem from the cabbage leaves, and tear them to small pieces (1.5"x1.5") with your hands
  • Cut the pork slices to 1.5-2.0" pieces
  • Rinse the noodles with cold water and drain the water
  • Add sugar, soy sauce, ketchup, and Worcestershire sauce to a small bowl, and mix well
  • Put the pan on stove. Then, turn heat to high and add oil
  • Add pork slices, and stir at medium to high heat
  • Once pork fat comes out and the pork pieces turn brown, add the onions and stir
  • Once the onions become translucent, add the carrot and mushrooms slices and stir
  • After about 3 mins at medium to high heat, add the noodles and the sauce and stir
  • Continue to stir at medium to high heat for about 5-6 mins4
  • Adjust taste with salt or additional soy sauce

Notes

  1. Pork belly slices could be replaced with other proteins, such as chicken, beef, tofu, squid...
  2. You can use either dry or fresh mushrooms
  3. If you happen to have Worcestershire sauce, you can use it. Otherwise, you can use just soy sauce to make your ingredients list shorter
  4. Don't cover the pan, so the steam can escape. Don't make the noodles too wet
